Cabbage & Sausage Soup

This week we've had some cooler temperatures & I'm cold.  So soup has been on the menu.  We've had 4 different soups this week & a couple were new to us & were really good.  So I have to share.

Since a generous neighbor vendor at the Goshen Market in Edwardsville  gave us a head of cabbage & I had some ground sausage in the fridge I thought I'd google some recipes & see what I could come up with.  Those who know me, know I never follow a recipe to a T.  I just use them for ideas.  So forgive me if I don't have detailed instructions.  If you need any questions answered just ask.  I'll try to answer to the best of my ability.

Cabbage & Sausage Soup

Ingredients

1/2 lb. ground sausage
1/2 lb. bacon (cut in small pieces... works best when cold & you can slice or use               kitchen shears)
1 medium yellow onion, chopped
1 qt. of diced tomatoes (I used tomato juice that I had canned last year)
1 qt. Chicken Broth
1 T paprika
1/2 t cinnamon
Braggs Liquid Aminos (to taste)
1 head of chopped cabbage
1-2 cups of Brown Rice
Sour cream for serving

In a 5 qt. stock pot brown sausage.  When almost done add bacon.  When the bacon is almost finished cooking add the onion & cook on low heat 'til translucent.  Take a slotted spoon & scoop out the meat onion mixture & pour the grease out of the pan.  Return the meat onion mix back to the pot.  Toss in the paprika & cinnamon & saute a minute or so.


Add the chicken broth, tomatoes or juice & the cabbage.  


 Cook on low heat 'til the cabbage is done to your liking (I like it well done & translucent). When done add Braggs Liquid Aminos & Rice.  


I added hot sauce to my bowl as others may not appreciate it (not to mention names). Then topped it off with a couple spoon fulls of sour cream.
